Shrimp Stir-Fry

Ingredients

20 medium shrimp
1 Tbsp coconut oil
1 Tbsp orange juice
1 Tbsp brown rice vinegar
1/2 tsp fresh grated ginger
Snow peas
Chopped onion
Cabbage
Red Bell Pepper

Directions:

1. Sauté shrimp in a skillet with coconut oil until cooked through.
2. Whisk orange juice and brown-rice vinegar with ginger.
3. Sauté snow peas, chopped onion, cabbage and red bell pepper in a separate skillet with ginger sauce until slightly tender.
4. Stir in shrimp.
5. Serve over cooked 1/2 cup Quinoa or wild rice.
