Ingredients (veggies make enough for 4 meals)
2 bell peppers
chicken sausage or turkey bacon
Optional: spinach, mushrooms, salsa, broccoli
2 eggs (per meal)
1. Chop all veggies & put in a bowl. These will be your veggies for the next 4 days. 2. To prepare a meal, pour 1 Tbsp olive oil in pan, sauté veggies then move to the side of pan.
3. Crack 2 eggs in open side of pan and make any style.
4. Mix eggs with veggies or have them on the side.
5. Option to heat a tortilla in pan after eggs and put egg mixture on warmed tortilla.
