Eggs and Veggies

Ingredients (veggies make enough for 5 meals)

4 bell peppers
1/2 onion
4 to 5 links of lean chicken sausage
1 can of beans, any kind, drained and rinsed
4 Roma tomatoes (will make mixture a little more liquid.. can wait till day of cooking to add)
Optional: spinach, mushrooms, salsa, broccoli
2 eggs (per meal)
Olive Oil

Directions

1. Chop all veggies, halve then slice chicken sausage, and combine with beans in large bowl. Can store veggies like this for up to a week. 2. To prepare a meal, pour 1 Tbsp olive oil in pan, sauté veggies then move to the side of pan.
3. Crack 2 eggs in open side of pan and make any style.
4. Mix eggs with veggies and serve.
5. Option to heat a tortilla in pan after eggs and put egg mixture on warmed tortilla.
