Crustless Quiche


1 cup mushrooms
1 red pepper
1/2 onion
4 to 5 links of chicken sausage
1 to 2 cups spinach
18 eggs (optional some egg whites)
Creole seasoning
Optional: add almond milk to eggs


1. Cut up the vegetables in a bowl, season them and pour into a 9 x 13 pan.
2. Beat eggs by themselves – season them and pour over vegetables.
3. Bake at 350 for 35 to 40 minutes or until done.
