My favorite recipe is not really a recipe but a meal – breakfast!
½ cup Bob’s Red Mill whole rolled oats
2 TBS crushed almonds (approx. 12 nuts)
½ cup skim milk
1 scoop vanilla protein power
½ diced apple
½ cupdiced berries: strawberries, raspberries, blueberries
¼ cup raisins or other dried fruit (cherries, cranberries, currants, etc.)
Microwave the oats in water to cover oats for 1 minute and let cool.
Mix milk and protein power and pour over oats and stir to loosen up cooled oats.
The treat is the vanilla flavor and it is a trick to get the right amount of protein power and milk so that it is not too much vanilla and not too much liquid.
Add fruit, berries, raisins, nuts and granola. Enjoy!
Makes two servings: Calories = 365, Fat = 9, Carbohydrates = 60, Fiber= 10, Protein = 12
To reduce calories and carbohydrates do not add granola, dried fruit or nuts, saving 170 calories and 25 carbohydrates
Add 2 hard-boiled or scrambled eggs to complete the meal, adding 140 calories and 12 grams of protein.
I enjoy this meal because I get my fruit sugars and carbohydrates in at the beginning of the day.
