Crunchy Granola

Awesome topper for oatmeal, mixed in with yogurt to add crunch… use your imagination!

6 cups rolled oats (old fashioned)
1 cups mixed nuts and seeds
1/4 cup ground flaxseeds
1 cup dried unsweetened shredded coconut, optional
1 tsp ground cinnamon or to taste
dash salt
1/2 to 1 cup honey or maple syrup to taste
1 cup raisins or chopped dried fruit, optional

Pre-heat oven to 350 degrees. Add all ingredients except for raisins and place on sheet pan. Bake, stirring occasionally, for 30 minutes or until mixture is evenly brown. (note: the browner it gets without burning, the crunchier the granola will be)

To mix Granola: remove pan from oven. Add raisins or dried fruit. Cool on rack, stirring occasionally, until granola reaches room temperature. Transfer to sealed container. Store in refrigerator.
